Filling
1 cup sour cream
1 egg
3/4 cup sugar
2 Tablespoons flour
1/4 teaspoon vanilla
Dash of salt
2 cups peeled and sliced tart apples (I use at least 3 cups)
(I have been known to substitute the apples with pears, peaches, etc. - when using the stone fruit I throw in some tapioca and use a bit less sour cream so that the pie doesn't come out to soupy)
1 unbaked pie shell

Topping:
1/2 cup brown sugar
1/3 cup flour
1/4 cup soft butter

Directions:
Directions:
Beat sour cream, egg, sugar, flour, vanilla and salt. Add apples, mix and coat well. Turn into pie shell and bake at 400 deg F for 25 minutes.
Sprinkle with crumb topping and bake 20 minutes more. Let cool to room temperature and serve.
