3 cups Fresh or frozen corn
1 large potato, diced (best if cooked prior)
or use large can of diced potatoes
2-3 hard boiled eggs, sliced
2 tbsp flour
1 tsp salt
1/4 tsp pepper
4 tbsp butter
Pie Pastry

Directions:

Use an 8 inch square baking dish. Combine corn, potatoes, eggs, seasonings, and butter. Add milk to cover corn
in dish. Cover with pie dough. Flute edge and cut vents into top.
Bake 400º until crust is browned and bubbly.

I always double this recipe and instead of milk I use chicken broth and I add about 2 cups
cooked and chunked chicken. Sometimes I add some chopped celery and a handful of chopped carrots for color.
