I Marinate Chicken
2 chicken breasts - cut up in strips
1 tbsp. garlic paste
1 tbsp. ginger paste
1 tsp of salt
1 tbsp. of corn starch
1 beaten egg
2 tbsp. of olive oil for frying

II Vegetables
1 tsp. of fresh chopped garlic
1 tsp. of fresh chopped ginger
3 tbsp. olive oil
1 bunch of spring onions - chopped
1 red bell pepper
1 green bell pepper
1 orange bell pepper
1 yellow bell pepper
2 carrots - sliced
2 cups sliced mushrooms
1 cup snow peas
2 tbsp. bamboo shoots
2 tbsp. cilantro

Thickening Sauce
1 tbsp. sesame seed oil.
1 tbsp. soy sauce - light
1 tbsp. of chicken stock
1 tbsp. Worcestershire sauce
1 tbsp. oyster sauce
1 tsp. white pepper
1 tsp. brown sugar or honey

1. Chicken
Marinate the chicken in a mixing bowl and add the ingredients in I. Set aside for about 30 mins.

2 Stir fry the chicken in olive oil and cook until it is done. Take the chicken out and place on a clean dish. Do not use the same dish as the one used to marinate the chicken.

3. Sauce
Mix the ingredients for the sauce and set aside.

4. In a wok, add olive oil and add fresh ginger, garlic and white part of the spring onions. Add the carrots and mushrooms first. Cook for about 5 mins and add the rest of the the vegetables. Do not overcook the vegetables. Add the chicken and the sauce until it thickens.

5. Serve on a dish and sprinkle cilantro.

This dish goes well with Jasmine rice.
