1 c. Split Green Peas
1 qt. Water
1 Bay Leaf
1 stalk Celery, diced
1 Carrot, sliced
1 med. Onion, diced
1/2 Garlic Clove, peeled
1 Tbsp. Butter
2 tsp. Salt
1/4 tsp. Pepper
1 1/2 c. Milk

Directions:
Directions:
Add washed split peas to water in large kettle. Add bay leaf, vegetables, garlic, and 1 tsp. salt. Cook over low heat, stirring occasionally, for 2 hours. Remove garlic and bay leaf. Strain or sieve peas and return to kettle. A dd butter, remaining salt and pepper. Thin with milk. Simmer gently. Serve how with crisp crackers or croutons.
