1/2 cup flour
Salt and pepper to taste
2 pounds calves liver, 8 pieces
3/4 cup bacon dripping (if you don’t make 3/4 cup of bacon drippings, you can top off with vegetable oil)
2 medium onions, thinly sliced
8 strips cooked bacon, reserve the bacon drippings

Directions:

Season the flour with salt and pepper.
Dredge each piece of liver in the flour and shake off the excess.
Heat the oil in a sauté pan.
Add the liver and sauté over medium high heat for five minutes on the first side and four minutes on the second side.
Transfer the liver to a heated platter and tent with aluminum foil to keep warm.
Reduce the heat to medium and add the onion slices to the pan.
Adjust your seasonings and cook until tender, about five minutes.
Arrange the onion over the cooked liver and add bacon strips.
Serve immediately.

Liver was the only food I didn’t have to eat. My mom would make a hot dog for me when she made it. To this day I don’t eat liver, I really dislike it!
But my mom and dad loved it. I know a lot of people love it. So this is one recipe in here I’ve never made - but my mom made it often!
