3 eggs
1/4 cup margarine, softened
1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1 teaspoon vanilla
2 cups milk
1 cup coconut

Directions:
Directions:
Add eggs, softened margarine, sugar, vanilla. Mix in together (may be mixed in a blender). Mix and add the flour, baking powder, salt. Mix and slowly beat in the milk and coconut. Place in a buttered dish and bake at 350º for one hour or until set and slightly browned. I usually make a double batch and bake in 2 buttered dishes. Cool before cutting. Very easy dessert to make.
