3 large potatoes
1 handful rice
3 peppercorns
1 bay leaf
3 carrots, sliced
Peas, beans or any vegetable of choice
Salt and pepper
2 tbs. oil
2 tbs. flour

Directions:
Directions:
Peel and dice potatoes. Put in pot, cover with water and cook. Add rice, cook 15 minutes. Add peppercorns, bay leaf and any vegetables of choice, can be fresh or frozen or leftovers. And cook till tender. In the meantime brown flour in oil to make a roux, you will probably need to use more oil and flour. This is to thicken and flavor the soup. Add the roux to the soup and stir well. Simmer till all vegetables are tender.
