Dough:
2 cups flour
1 tsp. Salt
1 egg
2 tbs. oil
½ cup lukewarm water

Filling:
1/2 cup unsalted butter
2 eggs
½ cup sugar
Grated rind of 1 lemon
1 pint of sour cream

Dough:
Mix ingredients well. Knead well until dough feels elastic and smooth. Place dough in a bowl which has been greased with oil, cover and let rest in a warm place for at least 45 minutes, then stretch paper thin and fill.

Filling:
Preheat oven to 350º.
Melt butter and set aside to drizzle on stretched dough. Beat 2 eggs, ½ cup sugar, peel of lemon till fluffy and light then spread on stretched strudel dough. Add the sour cream in dollops across the dough then roll up and place on a greased cookie sheet and bake about 45 minutes at 350º.
