1 pound carrots, cut into 1/2 inch thick coins
1 cup ginger ale
1 tsp fresh ginger, minced
1 tsp honey
1 tsp orange zest
Juice of one lemon
Juice of one orange
Salt and freshly ground pepper to taste

Directions:
Directions:
Preheat the oven to 375F.
Place the ginger ale, ginger, honey, orange zest and both juices into a heavy bottom sauce pan. Mix well.
Fold in the carrot coins.
Bring carrot mixture to a boil.
Place the uncovered pot in the preheated oven.
Bake for 35 minutes.
Liquid should reduce and form a sauce around the carrot coins.
Carrots should be tender, but retain character.
Season with salt and pepper and serve.

When I volunteered once a week at Project Angel Food we made meals for home bound cancer and AIDS patients. This was a favorite our team’s chef. We made this recipe a lot. I got really, really good at chopping those carrot coins!
