2 Tbsp. olive oil
1 large onion chopped
1 Tbsp. of fresh crushed garlic
1 can crushed tomatoes 15 oz.
1 can tomato sauce 15 oz.
1 can of tomato paste 6 oz.
1 cube of chicken or beef bouillon dissolved in 1 cup of water
OR 1 cup of chicken broth
1 tsp salt
1 tsp. black pepper
1 Tbsp. vinegar
1 tsp chili flakes (optional)
½ tsp of oregano
½ tsp of basil
2 Tbsp. fresh chopped parsley
2 Tbsp. fresh chopped basil

1. In a large saucepan fry the chopped onions on medium heat in olive oil until translucent.
2. Add garlic and continue stirring for another 10 secs..
3. Add the rest of the ingredients one by one stirring frequently.
4 Taste the mixture to ensure it is what you desire. Add more salt or pepper if needed.
5. Add ½ cup of water if the mixture is dry and let it simmer on low heat for about 1 - 2 hours.
6. Using a hand blender, blend lightly until the desire consistency is achieved.. if you like the sauce to be crunchy you can leave it the way it is.
6. if you have a slow cooker, cook on low heat for about 2- 3 hours .

This sauce can be made earlier and frozen in plastic bags.
