2 Cups all-purpose Flour
½ tsp. Baking Soda
½ tsp. Salt
1 Tbsp. finely grated Lemon Zest, plus 2 Tbsp. fresh Lemon Juice
½ Cup Unsalted Butter, room temperature (1 stick)
1 Cup Sugar
1 Lg. Egg
1 tsp. Vanilla Extract

Lemon Glaze:
2 Cups Confectioners Sugar
2 Tbsp. finely grated Lemon Zest
⅓ Cup fresh Lemon Juice

1. Preheat oven to 350º
In medium bowl, whisk together Flour, Baking Soda, Salt and Lemon Zest.
In large bowl, using an electric mixer, beat Butter and Granulated Sugar untill light & fluffy.
Add Egg, Vanilla & Lemon Juice & beat until combined. With mixer on low, beat in flour mixture.

2. Drop dough by heaping tablespoons 1 inch apart onto 2 baking sheets. Bake until edges are golden, 15 to 20 minutes. Let cool 2 minutes on sheet, then transfer cookies to a wire rack to cool completely.
Spread cookies with Lemon Gaze and set about 1 hour.
