1 head of cauliflower, torn into florets
1 T. EVOO
Salt
8 oz. softened, cream cheese
1/2 c. sour cream
1/3 cup hot sauce (Texas Pete)
1/4 c. milk
1/4 c. shredded Monterey jack cheese
1/4 c. crumbled blue cheese
2 chopped scallions

Directions:
Directions:
Preheat oven to 425º.

Toss florets with EVOO and season with salt. Roast until tender and browned, about 40 minutes.

Mix cream cheese, sour cream, hot sauce and milk (I threw in some Monterey cheese here also). Fold in florets and mash with a spoon. Spread in a pie place and sprinkle with cheeses and scallions. Bake 15-20 minutes more.
