2 heads of cauliflower
1-1/4 c. grated parmesan cheese
2 Tbsp. butter (plus extra for greasing your pan)
1/4 c. flour
2 c. milk
1/8 tsp. nutmeg (optional)
salt and pepper to taste

Cut up the cauliflower
Bring a pot of water and 1-1/2 Tbsp. of salt to a boil
Add cauliflower and cook until tender (about 10 minutes - DON'T OVERCOOK)
While it is cooking, lightly butter your baking dish.
In a sauce pan, melt 2 Tbsp. of butter and slowly whisk in flour for about a minute to make a roux.
Slowly whisk in milk, nutmeg, 1/2 tsp. salt and pepper to a smooth consistency.
Add 1 c. of parmesan cheese on top and stir until well combined. Add cauliflower, mix well and pour it into the baking dish. Sprinkle 1/3 c. of parmesan cheese on top of cauliflower gratin and bake at 375 degrees for about 25 minutes or until golden brown.
