1)Fish Marinade
5 Halibut Fish Steaks
½ cup of lemon juice
1 tbsp. of garlic paste
1 tbsp. of ginger paste
1 tsp of green chutney
1 tsp of cilantro chutney
2 tsp of salt
1 tsp of turmeric
1 tsp of coriander and cumin powder

2) Rice
3 cups of basmati rice
3 tsp of salt
2 tbsp. of lemon juice
7 cups of water
1 cinnamon stick
3 cloves
3 cardamom pods

3) Fish Biriyani Sauce
3 large onions sliced
3 tomatoes chopped
5 potatoes peeled and quartered
2 tbsp. of canola oil
½ cup of yogurt
1 can tomato paste
1 bunch of cilantro - chopped
½ tsp of cumin and coriander powder
½ tsp of turmeric powder
1 tsp. garlic paste
1 tsp ginger paste
1 tsp of salt
few saffron strands
pinch of yellow colour½
1 cinnamon stick
4 cardamom pods
4 cloves
1 tsp garam masala
2 tbsp. ghee or clarified butter

Halibut Fish Marinade
1) Combine all the ingredients except Halibut Fish and make a paste.
2) Cover the fish with the paste and marinate for about 30 mins to 1 hour.

Rice
1) Boil water, add salt and lemon juice. cinnamon stick, cardamom pods and cloves.
2) The rice should only be cooked about 75%.
3) Drain the excess water and discard the cloves, cardamom and cinnamon if you can.
4)Add a few strands of saffron and a pinch of color to ½ cup of warm water and keep aside.
5) In a saucepan add the rice, sprinkle half the fried onion.
6) Add 1 cinnamon stick, few cardamom pods, cloves. Sprinkle 1 tsp of garam masala
7) Pour the colour and saffron on the rice.
8)Warm ghee and add to the rice.
9) Cover the saucepan place in the oven for about ½ hour at 350º for the rice to cook and the flavors to mix..

Fish
1)In a deep frying pan, fry all the Fish until it is golden brown. Turn on the other side. Put it aside.

Fish Masala
1) Fry onions in canola oil until golden brown and put them aside.
2) Fry potatoes and once they are golden brown keep them on the side. If there is no oil add a tbsp. of oil
3) Using the same oil, add cinnamon stick, cardamom pods, and cloves. Add ginger, garlic, salt, tomatoes, turmeric, cumin and coriander powder. Add the tomato paste and yogurt and cook well.
4) Add I tbsp. of Fish marinate too and cook well.
5) If the paste is too dry add about ½ cup of water. Add the potatoes to the sauce.
6) In a large wide saucepan add fish masala and place the fish on top.
7) Sprinkle the rest of the onions, 1 tsp of garam masala and fresh cilantro. Cover.
9)Reduce the heat to minimum as the fish is cooked.
10) After 10 mins turn the heat off.


Variation to the Fish Biriyani Method

You can lay the fish in a wide saucepan or deep baking dish. and pour the cooked Fish Masala with potatoes on top. Sprinkle half the onion, garam masala and 2 tsp of cilantro. Add about ½ cup of water all over.
Spread the rice all over. Sprinkle the rest of the onions, saffron and colour. Add 1 cinnamon, cloves and cardamom. Warm ghee and pour over it. Cover tightly and put it in the oven at 350º for about ½ hour.
When serving place the rice on a rice plate and the Fish Masala on top.
This method is much better as the flavors get into the rice.


Serve with Kachumber and Raita.
