1 lb. Ground Beef
1 Onion diced (1 Cup)
1 Lg Carrots finely sliced
1 stalk Celery finely diced
2 cloves Garlic minced
1 (14.5 oz) can diced Tomatoes
1 (15 oz). can Red Kidney Beans Wirth liquid
1 (15 oz) can Great Northern Beans or Cannolini
1 (15 oz.) cn Tomato Sauce
1 (12oz.) can V-8 Juice
1 Tbsp. White Vinegar
1½ tsp. Salt
1 tsp. Oregano
1 tsp. Basil
½ tsp. pepper
½ tsp. thyme
½ cup uncooked Ditali Pasta

Directions:

1.Brown ground Beef in saucepan over med heat. Drain most of fat off.
2.Add Onion, Carrot, Celery & Garlic & sauce for 10 minutes.
3.Add remaining ingredients, except pasta. Simmer for 1 Hr. If it becomes too thick add a bit of water.
4.About 50 minutes into the simmering, cook the pasta in boiling water for about 10 minutes for al dante.
5.Add the pasta to the large soup pot. Simmer for another 10 minutes. Serve.
Serve with Parmesan Cheese on top and slice of Bread & Salad.
