Fresh Lobster meat ( I used two tails for 3 rolls)


1 medium size stalk celery- finely chopped
Mayonaise
2 green onions- sliced
Old Bay seasoning
Tabasco sauce
salt and pepper

Chop the lobster meat into bite size chunks
Add Mayonaise- 1 spoonful at a time, enough to hold meat together but the primary ingrediant is the lobster not mayonaise with some chunks of lobster in it
Add celery- amount you want- I like it because it gives it a nice crunch
Green onion- adds a bit of zest

Season with Old Bay, enough to make it spicy but do not overwhelm the taste of the lobster
Add a dash of tabasco sauce- just a couple of drops
Salt and pepper to taste.

Butter both sides of the New England style roll and grill in skillet so it is toasty lightly brown

Dish the lobster inside the roll

Just Yummy and part of what makes a New England Summer special
Serve with a side of potato chips and a dish of ice cream afterward!

At Katie's wedding in New Hampshire the Wakefield Inn did a nice spin on the lobster roll serving it in a lettuce leaf. They used a butter letter. It was excellent so if you don't want the bread this is another way of doing it.
