1 roll refrigerated sugar cookie dough, approximately 16 oz.
selection of fresh or canned fruit

Cream Cheese Frosting:
8 oz cream cheese (softened)
1/3 c powdered sugar

Directions:
Directions:
Remove cookie dough from the refrigerator and allow to come to room temperature.

Preheat oven to 350º. Spray 12-inch pizza pan lightly with cooking spray then press cookie dough onto a pizza pan to within 1/2 inch of the edge. Bake your cookie crust for about 12-15 minutes, until set but not browned. Cool the crust completely. Spread with frosting and then arrange fruit on top.

Irma always used canned mandarin oranges, kiwi, strawberries, and any fresh fruit that was in season. The more colorful, the better. She had such an eye for decorating that her fruit pizzas were always beautiful--which made them taste even better! If you want, you can warm some jelly or preserves in the microwave to drizzle over the top.
