4 Yellow Squash
4 Zucchini
3 Fresh Ripe Tomatoes
2 lg.Onions
Parmasean Cheese
Bread Crumbs
Salt

Directions:
Directions:
1. Slice Squash and Zucchini ¼ inch thick across. Salt with ½ tsp. Salt. Place in colander and let the liquid drain for about 1 hr.
2. Slice Tomatoes. Salt . Place on paper towel lined cookie sheet to absorb the liquid for about 1 hr.
Press with paper towel to be sure the liquid is released.
3. Saute & carmalize Onion slices slowly to brown.
4. Layer squash and Zucchini in pan. Top with Onions than Tomatoes.
5. Take 1 slice fresh bread to make breadcrumbs. Mix with parmesan cheese.
Bake at 400º uncovered for about 40 minutes
