1 1/2 cups flour
3/4 cup sugar divided into 2 separate bowls
1/2 tsp baking powder
1/4 tsp salt
Dash of ground cinnamon
1/2 cup shortening
1 egg white
1/2 tsp vanilla
4-5 medium peaches
1/2 tsp almond extract
1 TB cornstarch

Directions:
Directions:
1) Set out a med sized mixing bowl, and 2 small cereal sized bowls.
2) In mixing bowl, combine flour, one of the divided sugars baking powder, salt and cinnamon.
3) After combining dry ingredients, cut in shortening until mixture appears crumbly.
4) In a small bowl, whisk the egg white and vanilla together and add to crumbly flour mixture, stirring gently with a fork to moisten.
5) Remove 1 cup of the crumbly mixture and set aside for the topping.
6) Press remaining mixture onto bottom of greased pan.
7) Drop peaches into boiling water for 45-60 seconds to loosen skins and drop at once into a large bowl of ice water to stop the cooking process.
8) Remove peaches from ice water and use a paring knife to peel skin off. Cut into slices and put into a bowl.
9) Stir 1/2 tsp almond extract into peaches , then stir in the remaining sugar combined with the cornstarch.
10) Pour peaches onto the crust in the baking pan.
11) Top with the 1 cup of crumbly mixture remaining and bake in a 375 degrees oven for 35-45 minutes or until golden brown and bubbly.

A summertime favorite! Can substitute other fruit but may need to adjust amount of cornstarch depending on how juicy the fruit is.
