2-3 ripe bananas
1 tbsp. lemon juice
1/2 cup vegetable oil
1/2 cup soy milk
1 cup brown sugar
2 1/4 cups all purpose flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 PRANA kilimanjaro mix (150 g mixed nuts)
1 tbsp vegetable oil for the bread pan

Directions:

In a bowl whisk together the bananas, lemon juice, vegetable oil, soy milk and brown milk until smooth. In a separate bowl, combine flour, salt, baking powder, baking soda and nut mix. Add the dry ingredients to the wet and stir as little as possible. Spread the batter in a prepared pan and bake for about 45 minutes in a preheated oven to 180 degrees C./ 350 degrees Fahrenheit.
