400 g noodles
6 king oyster mushrooms (regular mushrooms work as well)
10 cherry tomatoes
3 white onions
200 ml soya milk
10 basil leaves
2 tbsp. sunflower oil
3 tbsp. balsamic vinegar
salt, pepper

Directions:
Directions:
Start by cooking the noodles al dente. Peal the onions, cut into small cubes and halve the cherry tomatoes and the mushrooms lengthwise. Heat the oil in a big pan and fry the mushrooms for about 3 minutes on each side. Add the tomatoes, through-mix, spice with salt and pepper and set in an extra bowl. Next, fry the onions in the same pan, add the soya milk, then the cooked and drained noodles, warm up, taste with salt and pepper and finally add the mushroom-tomato-mixture. Garnish with fresh basil leaves and drizzle vinegar on top.
