5 slices bacon
3 lbs green beans, cleaned and trimmed
1 large onion, halved and sliced thin
2 1/2 cups water
Salt and pepper to taste
1 tsp sugar

Directions:
Cook 2 slices of bacon in a Dutch oven, over medium heat. Cook until crisp, 5 to 7 minutes.
Using a slotted spoon transfer the bacon to a paper towel lined plate. Leave fat in the pan.
Add onion to the bacon fat and cook until soft, about six minutes.
Add the water, green beans, 2 tsp salt, sugar and the remaining 3 slices of bacon, bring to a boil.
Cover reduce heat to medium low and simmer.
Stir occasionally.
Cook 35 minutes, until the green beans are tender.
Remove lid, discard bacon slices.
Increase heat to medium high and cook until the liquid is slightly reduced, about five minutes.
Season with salt and pepper to taste.
Stir carefully, do not break the green beans.
Transfer to a serving bowl and crumble the reserved bacon over the top.
