2 c. flour
4 tsp. baking powder
˝ tsp. salt
3 egg yolks (beaten)
1˝ c. milk
˝ c. oil
3 egg whites (very stiffly beaten)

Directions:

Sift together dry ingredients. Combine yolks, milk, and oil. Stir into dry ingredients.
Fold in whites, leaving a few fluffs. Bake in waffle iron.

Joni’s note: These waffles are light and fluffy, and smell heavenly when they are baking. They’re good with butter and syrup, or with Bette’s jam. Mom made them a lot for us when we were growing up on the farm. Sean and Kerry, who were big breakfast eaters, loved them, and I made them frequently for them until they discovered Eggo waffles.
