1 1/2 tbsp. olive oil
1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped carrot
4 cups chopped cooked chicken breast
3 1/2 cups frozen hash browns
3/4 cup water
1/2 cup bbq sauce
1 tsp cumin
1 tsp chili powder
1/2 tsp minced garlic
1 cup shredded cheddar cheese
1 jalapeno pepper, seeded and minced

Directions:
Directions:
Preheat oven to 375o.

Heat oil in skillet over high heat, Add onion, celery, pepper and carrot, saute for 1 1/2 minutes, add chicken thru garlic, bring to a boil. Reuce heat and simmer for 2 minutes. Bake at 375o for 10 minutes.Sprinkle with cheese and jalapeno, bake for 5 minutes longer.
