Glaze

1 cup (2 sticks) unsalted butter
3/4 cup light brown sugar
3/4 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking soda
2 1/4 cups flour
12 oz. white chocolate chips
1 cup chopped macadamia nuts
1 teaspoon key lime zest


Directions:

In a mixing bowl, cream the butter and sugars together until smooth.
Add eggs and vanilla, and beat until combined.
In a separate bowl, sift together flour, salt, and baking soda.
Add dry ingredients to the dough one cup at a time, mixing to combine after each addition.
Stir in chocolate chips and nuts.
Scoop out dough into approximately 1 inch rounds onto greased cookie sheet, about 2 inches apart.
Bake at 350* for 8-10 minutes.
After cookies have cooled, transfer them onto a wire rack, and place foil underneath. Drizzle with glaze and let cool and set.
Store these cookies for up to one week in the fridge, and up to 6 months in the freezer.

12 oz. white chocolate chips
1/2 cup heavy whipping cream
1 key lime, juiced

Directions:

Pour chocolate chips into a large glass mixing bowl.
In a small saucepan, heat heavy whipping cream until just before boiling.
Pour the heavy cream over the chocolate chips, and whisk until smooth.
If needed, put an inch of water in the saucepan, and place the glass mixing bowl on top of it on the stove. Heat over medium high heat, whisking until the chocolate is smooth. Be careful that the water does not touch the bottom of the glass bowl, or the chocolate will scorch and burn.
Once the ganache is smooth, whisk in the lime juice.

Drizzle onto cookie.

These are good without the glaze, also. And...I melt my chocolate in the microwave....just watch closely and stir a lot. It will scorch before you know it.
