5 oz cauliflower
5 slices lox
.5 tbsp cream cheese
1 tbsp japanese mayo
1 oz cucumber
.4 oz carrot
3.5 oz avocado


Directions:
Directions:
1) Boil cauliflower until cooked. drain in fine metal sieve until as dry as possible. Meanwhile, cut up your cucumber and carrot into small sticks.
2) When cauliflower drained, add cream cheese until melted (helps it stick together)
3) Lay one sheet of nori down, then spread the cauliflower around the edges, leaving one long edge with about 3/4 of an inch (to help seal the sushi).
4) Spread one line of japanese mayo with a spoon.
5) Lay the vegetables down in the mayo, cut up avocado in slices. Then roll together. Wrap in plastic wrap, then leave in fridge for an hour or so until cold.
6)Serve and satisfy your sushi craving. Who needs rice? Not you!
