2 T black peppercorns
2 T fresh mint
2 T fresh rosemary
2 T fresh sage
2 T fresh thyme
2 T fresh Oregano
4 cloves garlic
½ C olive oil
pinch kosher salt

Put the peppercorns in a small food processor and grind add all the fresh herbs to the processor and chop, add garlic cloves and chop, add oil and salt process.
Preheat oven to 400º

2 Racks of Lamb Frenched ( see directions below)
2 T kosher salt
olive oil for grilling

How to French a rack of lamb
1 Stand the lamb rack up on one end so that you can see the "eye" of the lamb chop.
Score the fat side at the edge about an inch and a half or so up the rib from the eye to use as a cutting guideline. Do the same on the other end of the rack.
2 Using a sharp knife, cut through the fatty side of the rib roast, to the bone, from one marked end to the other. Then go back over your cut and holding the knife perpendicular to the roast, jab it in several places to go all the way through the other side, so that the reverse side gets "marked" with scores. Those markings will delineate the boundary beyond which you will not cut. Working from the skinny ends of the rib bone, make a cut down along the bone, until you get to the previously scored marking, then cut across to the next rib and cut up to the end of that rib bone. Continue to do this until all of the bones have had the flesh cut around them.
3 Turn the rib rack over, so that it is now bone side up. You should be able to see the markings made from the knife that got inserted from the other side. Those markings will delineate the boundary beyond which you will not cut. Working from the skinny ends of the rib bone, make a cut down along the bone, until you get to the previously scored marking, then cut across to the next rib and cut up to the end of that rib bone. Continue to do this until all of the bones have had the flesh cut around them
4 Turn the rack over again so that the fat side is on top, and begin to pull off the fat and flesh from the bones. Use your knife to help cut away any flesh that is sticking to the bones.
5 Scrape away any residual flesh on the exposed bones. Use a towel to wipe the bones clean.

Place the frenched lamb racks on a work surface and sprinkle each side with salt. Rub the herb mixture on the lamb.
Cover lamb and herb mixture let rest for 1 hour prior to roasting.
Heat a grill pan over high heat and brush with olive oil
Add the racks rounded side down and sear until brown (3/5 minutes).
Transfer to a rimmed baking sheet in the same position (do not flip)
Roast until desired doneness.
20 to 25 minutes for medium less for rare, more for well (lamb should not be served very well done)
Let lamb rest 7 to 10 minutes under foil before slicing.
 

Apple Mint Compote

½ C brown sugar
1 T light corn syrup
1 Granny Smith Apple diced
¼ C firmly packed mint leaves
1 T apple cider vinegar
½ C Water

Directions:
Directions:
Put the sugar, corn syrup and water in saucepan and bring to a boil. Add the apple and cook until thickened about 10 minutes. Add the mint and vinegar and stir to combine. Season with salt. This adds delightful flavors when serving lamb.

I have always been the one to cook the Lamb for Easter Sunday dinner since I am one of the few who like lamb. I have had many different recipes over the years but this one seems to be the best. Steve who also likes lamb asked for it to be in this book.
