7-oz can tuna, drained and flaked
2 tbsp mayonnaise
2 tsp lemon juice
4 slices white bread
1 egg white
2 tbsp mayonnaise
dash cayenne
1 tbsp chopped parsley
2 tbsp finely chopped sweet pickle, well drained
paprika

Directions:
Directions:
Blend tuna, 2 tbsp mayo and lemon juice. Toast bread on one side under broiler. Turn and toast other side very lightly. Spread the toast with tuna mixture.
Beat egg white until stiff. Fold in 2 tbsp mayo, cayenne, parsley and pickle. Spread over tuna.
Put low under broiler and broil until tops of sandwiches are delicate brown and puffed. Sprinkle lightly with paprika and serve immediately.
