2 green peppers, seeded and roughly chopped
1 onion roughly chopped
2 ripe avocados, peeled and seeded
2 garlic cloves, more if you like garlic
1/4 jalapeno, stemmed, seeded and roughly chopped (optional)
1/2 bunch fresh parsley
1/2 bunch fresh cilantro
1/3 cup red wine vinegar
1 tbsp salt or to taste
1/4 tsp black pepper

Directions:
Place all ingredients except olive oil. Process until mostly smooth. Add 1 cup olive oil in a stream with the processor running and process until completely smooth.

It is best to let the sauce stay at room temperature for at least an hour to have the flavors meld.
Store in refrigerator.
