1 cup chopped onion
1 pound ham
pinch of salt and pepper
1 teaspoon vegetable oil
water
1 pound dried split peas
carrots or other vegetables (optional)

Directions:
Directions:
In a medium pot, saute onions in oil, add the split peas and ham and enough water to cover ingredients. Season with salt and pepper.

Cover and cook until there are no peas left, just a green liquid, about 2 hours. While cooking, check water and add more if you need to.

Once the soup is a green liquid, remove from heat. Let stand so it will thicken. Once thickened you may need to heat to serve.
