2 large zucchini
2 tbsp butter
1 tsp olive oil
1 cup shredded cheddar or colby cheese
1/2 cup sour cream
2 tbsp green onions, chopped
1 egg
3-4 fresh basil leaves, chopped
salt & pepper

Directions:
Directions:
Preheat oven to 350º. Slice zucchini. Melt butter and oil in large skillet.
Sauté the zucchini until tender and starting to brown. Cook on both sides, then drain on paper towels. Cook in batches.
Layer the zucchini slices in a deep baking dish.
Mix together the remaining ingredients, and spread over the zucchini.
Cover and cook for 20 minutes, uncover, then cook for additional 5 minutes.
Let set for 5 minutes before serving.
