Ingredients: 1 ½ lbs. boneless beef chuck roast, well trimmed and sliced thin 2 tsp. olive oil 1 large onion, chopped 4 cloves garlic, minced ¾ cup beef broth ½ cup low sodium soy sauce ⅓ cup brown sugar 2 tbsp. sesame oil ⅛ tsp. red pepper flakes 1 lb. fresh broccoli florets 3 tbsp. water 3 tbsp. corn starch fresh cracked pepper toasted sesame seeds Steamed rice

Directions:Slice beef and season with fresh pepper. Heat olive oil and sauté beef for 1-2 minutes in batches (do not crowd) until browned. Transfer to a plate. Add onion and sauté for 1-2 minutes or until softened. Add the garlic and sauté 1 minute longer. Add the beef broth, soy sauce, brown sugar, sesame oil and red pepper flakes to your pot with the onion and garlic. Add the browned beef and any accumulated juices. Close the lid and select high pressure. Set the timer for 12 minutes Place broccoli florets in a bowl with ¼ cup water and microwave for 3-4 minutes until tender. ( I like mine very tender) When the pot beeps, do a quick pressure release. When the valve drops, open the lid. Combine the water and cornstarch in a cup and stir until smooth. Add to the pot and stir well to combine. Turn the pot to sauté/brown and stir until the sauce comes to a boil and thickens. Add the steamed broccoli. Serve over hot rice and garnish with sesame seeds. |
