Poppy Seed Filling:
1 cups poppy
1 (12 oz.) can evaporated milk
3 Tbsp. corn syrup
2-3 Tbsp. butter
cup sugar
2 Tbsp. flour (optional)
Pinch of salt
1 tsp. vanilla

Grind poppy seed in coffee grinder. Put poppy seed and milk in bowl let set one hour, more is better (you do not need flour if you let soak and cook the seeds longer). Add sugar and flour (optional) mixed together to the poppy seed and stir. Heat in microwave or stove (stirring as not to burn). You need to stir often. When thick add the syrup and heat a little more. Add the butter and vanilla. Optional: raisins

Apple Filling -- Mash a can of Apple Pie filling with fork, add a little cinnamon. Coconut pie filling is great too.

Apricot Filling -- Mash and stir in 1 can Apricot Solo filling.

Prune Filling -- Cover prunes with water and cook in microwave till soft. Drain if too much liquid and beat with mixer. Add sugar and vanilla to taste. For diabetics you do not have to add sugar to this fruit.

Cream Cheese Filling -- 8 oz. cream cheese, 3-4 Tbsp. sugar, 1 egg yolk, 1 tsp. vanilla. Can put the cream cheese filling in the kolach and add a whole cherry in the middle.

Cherry Pie Filling -- 1 can Cherry Pie filling. Can mash the cherries.

1-2-3 Streusel Topping --1 Tbsp. soft butter, 2 Tbsp. sugar, 3 Tbsp. flour; Mix together with fork to make a crumb-like topping (add more flour if necessary). Sprinkle on kolaches before baking. Put this on kolaches after you fill them.
