6 firm, ripe tomatoes
1 small onion, minced
1 Tbsp sweet basil (chopped)
1 Tbsp dill weed (chopped)
Salt and pepper to taste
Pinch of chopped fresh parsley
4 Tbsp olive oil
3 Tbsp wine vinegar

Directions:
Directions:
Wash and thickly slice tomatoes.
Put into a bowl with the minced onions and herbs.
Toss tomatoes until tomatoes are coated with herbs.
In a small bowl whisk the oil and vinegar together.
Add oil to tomatoes and toss and coat again.
Chill 12 to 24 hours.
