2-3 tbsp flax seed / powder
20 almonds
1 egg
1 tbsp coconut oil
1 pinch baking soda
2 pkg Stevia
1/4 tsp tumeric to taste
1/4 tsp cinnamon to taste

Directions:
Directions:
In food processor, blend flax seed & almonds until smooth. If using flax powder just blend the almonds.
In coffee cup add the coconut oil to the bottom and then add flax/almond mix, cinnamon, tumeric, stevia, and baking soda. Then add egg and mix all together (the coconut oil may not mix all the way and that is ok).
Can also add some raspberries or blueberries to the mix.
Cook in microwave 1 1/2 to 2 minutes. Muffin comes out easily from cup!
For even more of a treat add a dollop of heavy whipping cream, butter, fresh berries or nuts on top.
