2 boneless skinless chicken breasts, cut into 2" cubes
1/4 c olive oil
1 clove garlic, chopped
1/4 lb mushrooms, sliced
1 c diced tomatoes
1/4 c sliced black olives
1/2 can plain artichoke hearts
1 T chopped parsley
1/4 c white wine
1/4 c heavy cream (I've also used Half & Half with good results)
Salt and pepper to taste
flour
12 oz fettucine or your favorite pasta, cooked al dente

Directions:

Heat olive oil on medium high in a large sauce pan,
Meanwhile, coat the chicken with flour.
Cook chicken until golden brown on both sides.
Stir in garlic.
Sprinkle wine over and cook for one minute.
Stir in tomatoes, mushrooms, parsley, olives, artichokes, and season with salt and pepper.
Cover and simmer until chicken is fully cooked through, about 5-10 minutes.
Stir in cream and serve immediately over hot cooked pasta.

I clipped this restaurant recipe from the Marin Independent Journal when I lived in California. It's a family favorite and I've served this many times over the years. This recipe is easily doubled.
