5 large red potatoes, washed
½ c unsalted butter, softened and cut into pats
5 slices bacon, cooked and diced
2 whole green onions, sliced
¾ c sour cream
¾ c Baked Parmesan Rosemary Shoestring Fries, divided (additional recipe)
salt and pepper to taste

Directions:
Directions:
Gently drop the potatoes into simmering water and cook until fork tender, about 15 to 20 minutes. Remove the potatoes into a large mixing bowl and mash with a potato masher until chunky. Add the butter, bacon, green onions, and sour cream and continue mashing to combine. Sprinkle in ½ cup of shoestring fries and stir to combine. Season with salt and pepper to taste. Transfer to a serving dish and sprinkle on the remaining ¼ cup of shoestring fries. Serve warm.
