Homemade Blueberry French Toast Part 1

12 Slices day old bread (We leave the crusts on - - - gives a nice texture and appearance)
2 eight ounce packages of cream cheese
1 cup (or more) of fresh or frozen blueberries (We use more....the more the better!)
12 eggs
2 cups milk
⅓ cup maple syrup or honey

NOTE: For smaller families, simply cut the amount of ingredients in half

Grease an appropriate sized baking dish.
For full recipe: Use a 13 x 9 x 2 inch baking dish.
For 1/2 recipe, use a deeper, shorter baking dish.
The old fashioned corning ware baking dishes with glass lids work well.

Cut the bread into 1 inch cubes.
Place half of the bread into the greased baking dish.

Cut the cream cheese into 1 inch cubes.
Note: It helps if you take out the cream cheese ahead of time so that it an soften a bit.

Place the cut cream cheese in the baking dish over top of the bread evenly.
Place the blueberries over top of the cream cheese evenly. Be generous!
Top with remaining bread.

Beat the eggs in a large bowl.
Add milk and syrup and mix well.
Pour this mixture evenly over the layered bread - cream cheese - blueberries in the baking dish.

Cover and chill 8 hours or overnight.

Remove from the refrigerator 30 minutes before baking.
Cover and bake at 350º F for 30 minutes.
Uncover and bake 25-30 minutes more or until golden brown and the center is set.

Blueberry sauce and finish - part 2


Ingredients:

1 cup sugar
2 tablespoons cornstarch
1 cup water
1 cup fresh or frozen blueberries (or more!)
Optional: 1/2 cup blackberries or raspberries (in addition) - We tried this once and it brightened up the flavor
1 tablespoon butter or margarine


Directions:
Directions:
Combine sugar and cornstarch in a saucepan.
Add water.
Bring to a boil over medium heat.
Boil for 3 minutes, stirring constantly.
Stir in blueberries (and raspberries / blackberries if desired)
Reduce heat
Simmer for 8 to 10 minutes or until berries have burst.
Stir in butter until melted.

Serve warm over the French Toast.

Recipe for sauce makes 1 3/4 cup.

Note: You may also ask Uncle Brett for some Smuckers fruit flavored sauces in lieu of making your own!

Uncle Steve and Aunt Paula found this recipe in Taste of Home June/July 1996 magazine. We were experimenting with recipes as a couple (we were married in October 1996) and saw that this one had won the grand prize for this issue. The picture made it look delicious, so we decided to try it. We were sooooo glad we did! This is truly delicious, especially if you add more blueberries to it than what is called for (be generous). The home made sauce is fabulous, but we have also simply used maple syrup or some other fruit flavored sauce. But the homemade is truly the best option. Adding the raspberries and blackberries to the sauce was our own idea, and it really enhanced the flavor.

We tried serving this to our Novak family when we had an overnight (must have been years ago!), but with so many people, it took us a while to make enough. It does have to sit out 30 minutes after the overnight marinating, so just be sure to plan for that. It is well worth the wait.
