Ingredients: 1 onion (finely chopped) 1 clove of garlic (finely minced) 2 T. oil 3 small cans of tomato paste (Contadina) 3-4 qts. of tomatoes water (see directions) salt (measure inside lines of your palm) 1 t. sugar

Directions: |
Directions:Saute 1 finely chopped onion and 1 clove of garlic in oil until done. Don't overcook. Open 3 cans of tomato paste and saute the paste in the same oil (3-5 minutes). Put in 3 or 4 quarts of tomatoes. Finish rinsing out jars of left tomato sauce in jars with water and add to sauce. Add 2 cans of water to 1 can of tomato paste (6 cans of water) Add to sauce. Stir, make come to boil, then lower. Also add 1 little handful of salt and 1 teaspoonful of sugar to gravy. In another frying pan fry a piece of beef, veal and pork. Fry approx. 1 lb. sweet sausage and approx 1¼ lb. meatballs. Add spare ribs if you like in place of piece of pork. Add to gravy. Cook sauce approx. 1½ - 2 hours. (simmer & stir) |

Notes: We have modified this recipe by adding 1/2 c. locatelli cheese to the gravy. Use a large enough pot to add the meat later. If the gravy should happen to burn, DO NOT SCRAPE THE BOTTOM OF THE POT!!! Simply pour the contents into a new pot. If you should happen to burn the garlic, restart. Or your gravy will have a bitter taste.
