One recipe for Mother's Layer Cake.
One recipe for Lemon Curd
One recipe for Mother's Seven-Minute Frosting
Freshly grated coconut

Directions:
Directions:
Prepare the Lemon Curd and spread onto each layer. Let Lemon Curd come to room temperature for a thicker filling or use on cake while the mixture is still warm and let it absorb into the cake layers before frosting the cake.

Spread the Seven-Minute Frosting on the top and sides of the assembled cake layers. Sprinkle with coconut.

Note: I sometimes put the Lemon Curd between the layers as well as the frosting and coconut. Other times, I just put the Lemon Curt between the layers and the frosting on top and sides of cake. If you assemble layers when Lemon Curd is still warm (or too thick) as well as the frosting and coconut, the layers will slide. I do not add Lemon Curd to the top of the cake before frosting.
