2 lbs. chicken breast or tenderloins, diced into ¼ inch pieces
1 stick of Butter
2 tsps. Garam Masala
2 tsps. Cayenne Pepper (optional if you are looking for some heat)
2 tsps. Curry Powder
1 tsp. Ground Cumin
1 tsp. Ground Ginger OR 2 tsps. minced fresh ginger
1 can of Coconut Milk
1 cup Chicken Stock
1 (6-ounce) can Tomato Paste
1 Onion, minced
5 Garlic cloves, minced
Cilantro for garnishing
Salt to taste
2 tbsps. Corn Starch
1 tbsp. water

Basmati or Jasmine Rice

Directions:
Directions:
Turn on your pressure cooker to sauté.
Place stick of butter into the pot and let melt.
Toss in the onions and garlic and cook until half done. Add the coconut milk, chicken stock and tomato paste. Mix thoroughly.
Add the Curry Powder, Ground Cumin, Ginger, Cayenne, Garam Masala and salt to taste.
Place chicken into the pot and cover with sauce. Cook on Manual for 15 minutes.
After the 15 minutes, let sit for 10 minutes with a natural release of pressure.
Turn the pot back on to sauté. Mix the cornstarch and water together and then add to the pot. Mix well. Let the pot boil until the sauce is thickened.
Serve over basmati or jasmine rice.
Garnish with cilantro.
