4 sticks butter, softened to room temperature
3 cups sugar
6 large eggs, room temperature
4 cups all-purpose flour
½ cup fresh lime juice
¼ cup evaporated milk
4 tsps. lime zest, minced
1 tsp. vanilla

Directions:
Directions:
1. Preheat oven to 300º. Cover inside of a 10 inch tube pan with Pam spray. Set aside.
2. Using a mixer, beat the butter well until light in color and fluffy. Add the sugar and beat well for at least 5 minutes.
3. Add the eggs, one at a time, and beat until the yellow disappears.
4. Stir the lime juice, milk, zest and vanilla together.
5. Now mixing by hand, gradually add flour to the butter and egg mixture; alternating with the lime juice mixture. Begin and end with the flour. Mix well but just enough to incorporate all of the ingredients. Over mixing may make your cake tough.
6. Pour evenly into the tube pan and tap the pan to pop any bubbles.
7. Bake for 1 hour and 45 minutes or until a toothpick inserted comes out clean.
8. Let cool for 20 -25 minutes in the pan then transfer from the pan to a cooling rack.
