5 oz. of sourdough bread or any leftover bread
1 tbsp. plus 1/2 stick unsalted butter
4 6oz. seabass fillets
salt and pepper
1 lemon, zest and juice
few leaves of Thyme
3 cloves mashed garlic
1 cup fresh parsley leaves

Preheat oven to 350.
Pulse the bread in a food processor to get coarse bread crumbs
Coat a casserole dish just large enough to hold fillets with 1 tbsp. butter
Place fillets in casserole and season with salt and pepper, lemon zest and juice and thyme leaves
Melt the 1/2 stick of butter in a pan and add garlic. As soon as the butter starts to bubble, turn off heat and let garlic infuse into the butter.
Remove garlic from butter. Add bread crumbs and toss lightly until all butter has been absorbed. Add parsley and season to taste with salt and pepper.
Spread bread crumbs over fish fillets and bake for 12 to 15 minutes until bread crumbs are golden brown and fish is cooked.
