1 cup flour
1 tsp baking soda
2 TB sugar
grated lemon rind ( i use about a half a large lemon's worth)

2 TB melted butter
1 egg
1 cup buttermilk

Directions:
Directions:
mix dry ingredients. Melt butter ( i use a 2 cup pyrex measuring cup) then add the buttermilk while stirring rapidly with a fork. If the buttermilk is really cold the butter will seize, if that happens just stick it in the microwave for 15 seconds then stir it again should be fine. Then add egg and whisk it together well with fork. Add liquid to dry ingredients, stir only enough to mix well, do not over mix. Let set for 10-15 minutes and the batter will raise for very fluffy pancakes.
if you have leftover batter, refrigerate, add a pinch baking soda when you want to use it and let sit again for a bit before using Use within 3 days. it will get a bluish tint on top from the buttermilk but that's harmless.

add blueberries, mini choc chips, or thin banana slices and finely chopped walnuts for variations
