2 sprig(s) Celery
2 cup(s) Cherry Tomatoes
8 g Coriander
125 ml Corn Niblets
2 tsp Dijon Mustard
50 g Green Leaf Lettuce
2 Green Onions
2 Hot Dog Buns
1 Lemon
2 tbsp Mayonnaise
2 Mini Cucumbers
2 tbsp Olive Oil
1 tsp Paprika
250 g Shrimp

Directions:
Directions:
Peel the shrimp and put them in a bowl
Add paprika and season with salt and pepper

In a large skillet, heat 1/2 of the olive oil over medium heat, then add the shrimp and stir often during 2 to 3 minutes or until they are pink and cooked through.

Cut the cucumbers and tomatoes
Juice the lemon
Chop the coriander and the green onion
Cut the celery into small dice

In a bowl, mix the shrimp with the celery, the 1/2 of the green onion, the mayonnaise, the Dijon mustard and the 1/2 of the coriander. Season with 1/2 of the lemon juice and salt and pepper

Prepare the salad:

In a bowl, mix tomatoes, corn, cucumber, remaining green onions and coriander
Add the remaining olive oil, lemon juice and season with salt and pepper

Toast the buns if desired, add some lettuce inside and top with shrimp mixture
Serve with a portion of salad
