Cauliflower...1 head cauliflower....4 cups Panko....2 tsp sea salt....2 cups flour....2 cups soy milk....1 Tbsp rice vinegar.....oil for frying.....



Sauce.....2 1/2 cups water,,,,1/3 cup soy sauce....2/3 cup unseasoned rice vinegar....1 1/4 cup hot chile paste (gochujang)....1/3 cup toasted sesame oil....1/4 corn starch

Sauce: combine all ingredients in a bowl and which until smooth. Pour into a sauce pan and whisk until thick. Turn off the heat and set aside.


Cauliflower: Cut into bite size florets. Combine the panko and sea salt. Combine soy milk with the rice vinegar and whisk until it is the consistency of buttermilk. Set up an assembly line. Dip the cauliflower florets into the milk, than flour, than milk and then panko. Place on a sheet lined with parchment paper. Heat the oil to 350 and then cook each floret in a pan widely spaced on both sides until a deep golden brown. Remove and place on a paper towel lined pan.


Serve by bringing the sauce back to temperature and add the cauliflower and gently turn to coat all the pieces. Can be served over rice.
