Cake
1 white cake mix (prefer Pillsbury Plus)
1 cup oil
4 eggs
1 large can mandarin oranges, drained

Frosting
1 large box instant vanilla pudding
1 small can coconut (1 1/3 cup)
1 large can crushed pineapple with juice (must be heavy syrup)
1 large tub Cool Whip

Cake:
Mix above cake ingredients for approximately 2 minutes with mixer, keeping out a few oranges to decorate top of cake. Pour into 3 greased and floured [round] pans. Bake 350º for 20 minutes.

Frosting:
Mix pudding mix, coconut, and pineapple with juice with mixer. Fold in Cool Whip. Frost between layers, top, and sides. Then decorate with remaining orange slices.

I think we got this recipe from Aunt Saundra, but Mom doesn't remember that we did. In any case, it is very good, and I would like to eat some at the moment.
