6 large boiled potatoes peeled

2 tbsp. olive oil

½ tsp. mustard seeds
3 curry leaves
1 tsp. garlic paste
1 tsp. ginger paste
1 tsp. green chili paste
2 tbsp. lemon juice
1 tsp. salt
½ bunch of cilantro - chopped
¼ tsp. ajwain
¼ tsp. turmeric

For Batter
1½ cup besan flour
Enough water to make a batter resembling thick pancake batter
2 tsp. lemon juice
½ tsp. salt to taste
1 tsp. green chili paste
1 tsp. garlic paste
1 tsp. ginger paste
2 tbsp. chopped cilantro
1 tbsp. hot oil


2 cups of canola oil for frying

1. Boil the potatoes, ½ tsp. salt, peel, mash them lightly and keep aside..
2. In a frying pan, add the olive oil and mustard seeds, turmeric, ajwain and curry leaves. garlic and ginger.
3. Add mashed potatoes and mix well.
4. Add salt, green chili paste, lemon juice to the potato mixture and mix well.
5. Taste the potatoes for salt and spiciness. Add more salt or chili paste according to your taste preference.
6. Next add ¼ bunch of the chopped cilantro and mix.
7. Turn the heat off and keep aside to cool.
8. When the potato mixture has cooled down, take a portion of the potato mixture in the palm of your hand make small balls and place them aside on a plate.
9. Prepare the batter in a separate bowl. Add besan flour, lemon juice salt, green chili paste and chopped cilantro.
9. Add water very slowly mixing well to remove the lumps. Keep adding water until the batter is smooth and it resembles a pancake mixture and not too runny. If it is runny, add a little besan flour.
10. Add a tbsp. of hot oil to the batter.
11. On medium heat add canola oil in a wok or karahi. Dip the potato ball in the batter and fry until golden brown, turning with a skimmer..

These taste delicious with tamarind chutney or coconut chutney.
