1 and 3/4 cups all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 Tbsp lemon zest (1 small lemon)
1/2 cup unsalted butter (room temperature)
1 cup sugar
1 egg
1 tsp vanilla
2 Tbsp lemon juice.

Glaze:
2 cups powdered sugar
2 Tbsp lemon zest
1/3 cup lemon juice

Directions:

Preheat oven to 350F
Prepare a cookie sheet with parchment paper (or PAM), set aside.
In a medium bowl whisk together the flour, baking soda,salt and lemon zest.
In a large mixing bowl beat the butter for a few seconds, add the sugar and mix until light and fluffy.
Add the egg to the butter mixture. Beat a few more second.
Finally add the vanilla and lemon juice and mix until fully combined.
Now add the dry ingredients in your other bowl.
Mix until fully combined.
Drop cookie dough by the spoonful onto a prepared cookie sheet.
Bake until light golden on edges. 12 to 14 minutes
Remove from oven allow to cool 5 minutes, still on cookie sheet.
Then remove from cookie sheet, allow to finish cooling on wire rack.
Once cooled, prepare the glaze by whisking the powdered sugar, lemon juice and lemon zest together. Whisk until well combined.
Immediately spoon onto the tops of the cookies.
Allow to sit, glaze will harden.
Store in air tight container.

Marlene must have loved this cookie, she made it a lot.
Whenever she had a batch made she’d give me one when I came in the store.
I remember on one of my last visits to the store, before she passed away, she gave me three in a plastic baggie.
