6 Potatoes
2 eggs
2 cups flour
1/2 tsp salt
Lard
Directions:
Directions:
Boil the potatoes until done.
Drain and allow to cool.
Peel cool potatoes.
Grate potatoes.
In a bowl add potatoes, eggs, flour and salt.
Knead thoroughly.
Make Pancakes about 1/2 inch thick.
Fry in lard until crispy outside and golden brown.
Drain on paper towels set on top of a wire rack.
Cool just slightly.
